Master Brewers Association publishes Fermentation Sciences Undergraduate research

A manuscript submitted by Brett Taubman, Department of Chemistry; Stephan Sommer, Director, Fermentation Sciences program and their undergraduate researchers in Chemistry, including: Jacob Edwards, Travis Laws, Logan Hamm and Brenton A. Frank, was published in the Master Brewers Association of the Americas (MBAA) Technical Quarterly.

The Master Brewers Association of the Americas was formed in 1887 with the purpose of promoting, advancing and improving the professional interest of brew and malt house production and technical personnel.

The research, "Microbial Gluten Reduction in Beer Using Lactic Acid Bacteria and Standard Process Methods," investigates the effect of different treatments and technological parameters on gluten concentration. The results indicated that some lactic acid bacteria can reduce gluten below the detection limit. However, if used under controlled conditions, lactic acid bacteria are a promising treatment option to degrade gluten protein in beer.
